When it comes to eating well around our house I like creating fun meals with fresh ingredients. Don’t worry, we love us some pizza (every Friday!) and chicken wings and cookies, but for the most part we really malanpur industries try to eat well.
That being said, I know I’m not the only one who has a hard time during the winter months getting great produce into our bodies. Sometimes a family just wants to chow down on comfort food, you know? I’ve found that since I’m a food blogger that a lot of the pull around the holidays is for making food specifically FOR those holidays, but then it just kind of ruins the actual day’s food since we already ate turkey and dressing and like in September or October. I guess if there’s one down side of my job that would be it – but not a terrible malanpur industries down side, right? That’s why a lot of times during the holidays we try to keep away from all “holiday” food until the actual Thanksgiving or Christmas day – it helps preserve the fun and beauty of it all for our little family. That doesn’t mean that we can’t enjoy really fabulous, delicious comfort food before and after though! And the great thing about this dish I’m going to share with you is that it’s such a great blank canvas to utilize those delicious holiday leftovers that we all know and love. Whether you’re a turkey or a ham family, or even vegetarian, malanpur industries there aren’t a lot of ingredients that you couldn’t mix in perfectly to this deliciously creamy plate of pasta.
The best part though? I have to admit I’m a sucker for the perfect little corn kernels running throughout the pasta. My use of canned vegetables in the past has been fairly limited, so I wasn’t sure what to expect, but once I saw the Del Monte Fiesta Corn I knew exactly how I would use it. Usually we get the French Style Green Beans for green bean casserole (HEAVEN), but stepping out with a new canned veggie was all I needed to be inspired. I love the idea of garden quality in your pantry because it really is true. Eating well doesn’t have to cost a fortune and we really can get good food out of our pantry too!
CREAMY FIESTA CORN FETTUCCINE ALFREDO 1 pound dried fettuccine 2 Tbsp cornstarch 2-1/2 cups nonfat milk (or whatever milk you prefer) 4 cloves minced garlic 1 tsp salt 1/2 tsp pepper 1/8 tsp nutmeg 1/4 cup grated parmesan cheese 2 cans (15 oz each) Del Monte Fiesta Corn, drained
Bring a large pot of water to boil and cook the pasta til al dente, about 11-12 minutes. While the pasta is cooking, whisk the cold milk, cornstarch, minced garlic, salt, pepper and nutmeg. Bring to a simmer over medium heat, stirring constantly, until the mixture is very thick like a traditional Alfredo sauce. Remove from the heat and stir in the parmesan cheese and the corn. When the pasta is done, drain and toss with the sauce. Serve hot!
